What is Sodium Alginate?
Sodium Alginate is the sodium salt of Alginic Acid. Unlike Alginic Acid, Sodium Alginate is soluble in both hot and cold water. This makes it ideal in various applications to achieve viscous solutions at low concentrations, for gel formation, film formation and for its suspension capabilities. Sodium Alginate is stable at a pH range of 4-10 with the maximum viscosity obtained near neutral. Solutions of Sodium Alginate can be achieved at various temperatures, but extended heating will degrade the molecules and result in a permanent viscosity reduction. In a gelling application, the gel formations are controlled by the addition of calcium salt, use of a sequestrant and or ph adjustments. The gels formed can differ based on the proportions of mannuronic acid and guluronic acid units found in the alginate. Gels containing a higher ratio of guluronic acid produce a higher gel strength but are more prone to synerisis. While gels containing a higher ratio of mannuronic acid produce a softer more elastic gel.
