What is Iota Carrageenan?
Iota Carrageenan is a sulfated polysaccharide with typical structure of 1,3 linked galactose 4 sulfate with 1,4 linked 3,6-anhydro-D-galactose 2-sulfate. Iota Carrageenan produces an elastic thermo reversible gel that unlike its kappa counterpart produces no syneresis. Soluble in hot solutions Iota Carrageenan may be utilized in mixtures containing high salt concentrations. Typical applications include Soups, sterilized milks, ready to eat milk gels and freezable puddings.
Like most other hydrocolloids, iota carrageenan must first be dispersed and hydrated in liquid before use. Unlike lambda carrageenan, it is best dispersed in cold liquid.
