Organic locust bean gum (also known as organic carob bean gum), is a fine white powder made from the ground endosperm of the organic carob tree seeds. As a natural thickening agent, organic locust bean gum is used to provide stability and / or a smooth texture to organic food products such as dairy applications, condiments, and ice cream. Its properties lend it to be used in non-edible applications like organic cosmetics, paper products, pet food, and textiles.
Organic locust bean gum is a galactomannan polysaccharide. Similar in composition to organic guar gum, however Organic Locust Bean Gum must be dispersed in hot water in order to solubilize.
